Recipes for Sweet Potatoes: Christie’s Spicy Sweet Potato Bakes

This is from John Robbin’s book The New Good Life: Living Better Than Ever in an Age of Less, but we changed it up a little. There are lots of recipes for sweet potatoes, but this one stands out! 

Preheat oven to 375 degrees. Spray a baking sheet or shallow pan lightly with Pam.

  • 1 long thin sweet potato, scrubbed or peeled (we peeled it)
  • 2 Tbsp olive oil
  • 3 Tablespoons paprika
  • ½ tsp black pepper
  • ½ tsp onion powder
  • ½ tsp dried thyme, crunched up
  • ½ tsp rosemary, crunched up
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper (this makes it spicy… use less if you don’t want it hot)
  • ½ tsp salt

Cut sweet potato in half crosswise, then into large finger size pieces.

Put a little olive oil in a bowl and coat the sweet potato pieces.  Remove and place on piece of wax paper or in a dish to drain slightly.  Mix the spices together and put on another piece of wax paper or on a plate.  Roll the fingers in the spices and place on baking sheet. Bake for 20 minutes on one side, then turn and bake for another 20 minutes. 

Serve hot.   Serves 2
